NOTEWORTHY

Building foodtech factories and finding value in waste

🏭 DigitalFoodLab argues governments need to stop treating regulatory approvals as the finish line for foodtech. As alternative proteins move from R&D toward commercialization, the bigger bottleneck is financing and building production capacity. The piece argues governments should shift support toward shared pilot and demo facilities, industrial asset conversion, and scale-up infrastructure.

🌱 KITOCOAT received SEK 2.7M (~$290K) in project funding from the Swedish Board of Agriculture (Jordbruksverket) to advance its edible, biodegradable coating for fresh produce. The coating is designed to slow moisture loss and spoilage, and trials show up to 7x(!) increases in shelf life for some crops.

🌰 Revo Foods launches COTTAGE PROTEIN+ — Vienna's Revo Foods is rolling out a fermented cottage-cheese-style product made from apricot kernels into EDEKA and REWE in Germany this month. A 150g cup is listed at 17g protein, with only four ingredients: apricot kernels, water, salt, and cultures.

♻️ A Dutch consortium led by Wageningen University has secured €4M to turn agricultural side streams into food ingredients. The six-year project comprises multiple universities, 9 companies, and other stakeholders, to use dry fractionation and fermentation to upgrade protein-rich sidestreams from legumes, rapeseed and potato processing. The goal is to improve flavor, remove anti-nutrients and add vitamins like B12 and K2. Partners include Unilever, Avebe and AB Enzymes, with target applications spanning meat alternatives, snacks, spreads and tempeh-like products.
