The man challenging the “impossibility” of zero-oxygen food: Gaurav Tewari of Tewari De-Ox Systems
Can we solve a $3 billion global waste crisis by achieving the scientifically “impossible”? Meat processors currently struggle with short 15-day shelf lives that force inefficient supply chains and massive spoilage. Tewari De-Ox Systems believes they have unlocked the solution. By engineering a patented environment of absolute zero oxygen, they’ve created a process that halts degradation without chemical preservatives—extending the shelf life of retail-ready meat to an incredible 120+ days.
We’ve spoken to Dr. Gaurav ‘Doc’ Tewari, the veteran food process engineer and winner of the 2026 Tufts New Venture Competition, to discuss how he is disrupting the global protein market using thermodynamics and reaction kinetics.

💸 After several years of decline, VC investment in agtech is enjoying a modest comeback driven by renewed appetite for dual-use tech and advances in robotics. On LinkedIn, Arlene Dickinson laid out some eye-watering investment numbers elsewhere: AI companies collected $242B just in Q1 ‘26, while the entire global foodtech sector got $3.6B billion that same quarter. Lastly, DigitalFoodLab published its annual map of AgriFoodTech Unicorns.
🥩 Portion size matters. New evidence shows restaurants can reduce meat servings and increase vegetable intake to support healthier, more sustainable food choices without affecting customer satisfaction.
